Watercress Soup 西洋菜汤

西洋菜汤味甘微苦,性寒,清火,可以清燥润肺,多吃西洋菜,能够起到化痰止咳的作用 同時也利尿通便。也能够帮助人体提高免疫力,特别适宜儿童吃西洋菜,增强孩子的免疫力。我看了啊鴻老師分享也嘗試煲,果然是材料和煲法簡單,味道也不錯。

材料:
西洋菜    -    500g
湯骨        -    250g
红枣        -    7-8粒
枸杞        -    适量

做法:
1.首先清洗西洋菜,過後用鹽水浸泡15分鐘,然後濾水待用。這可以洗比較乾净。
2.用玉蜀粉清洗湯骨,然後加入清水,葱,姜,料酒和湯骨一起煮至沸騰。之後再煮5分鐘左右,撈起湯骨用清水清洗表面血沫。
3. 倒入2公升的清水在鍋和再加入湯骨和红枣一起煮之沸騰。
4. 拿一個濾網 放入一小撮的西洋菜,燙軟。把它剪短放入搅拌机,然後加入1/3杯水攪拌。
5. 把攪拌好的西洋菜汁倒入鍋内一起煮20分鐘。(這樣會更入味)
6. 加胡椒粉和鹽調味,然後把其餘的西洋菜放入鍋中和枸杞和泡枸杞水一起倒入,煮10分鐘。

Watercress soup is sweet and slightly bitter, cold in nature, clears fire, can clear dryness and moisten lungs, eat more watercress, it can reduce phlegm and relieve cough, and at the same time diuretic and laxative. It can also help the body improve immunity, especially suitable for children to eat watercress to enhance their immunity. I watched Mr. Ah Hong’s sharing and tried to cook it. The ingredients and cooking method are simple, and the taste is not bad.

Ingredient:
Watercress  - 500g
Soup bone  - 250g
Red dates    - 7-8 capsules
Goji berries - in moderation

Instrution :
1. Wash the watercress first, then soak in salt water about 15 minutes, then drain and put aside.
2. Wash the soup bone with corn powder, then add water,onion, ginger, cooking wine and cook until boiled. Cook another 5min, then take out the soup bone and wash the blood foam.
3. Pour 2 liters of water into the pot, then add the Soup bone and red dates and bring to a boil.
4. Take a strainer and put a handful of watercress into it, blanching till soft. Cut it short and put it in a blender, then blend with 1/3 cup of water.
5. Pour the watercress juice into the pot and cook for 20 minutes. (this will be more tasty)
6. Add pepper and salt to taste, then put the rest of the watercress into the pot, pour in the goji berry and soaking goji berry water, cook for 10 minutes.




White Radish Soup 白萝卜湯

白蘿蔔湯是一道家喻戶曉的湯。我蠻喜歡喝同時也會喜歡煮給家人喝。白蘿蔔湯有很好的消暑作用,同時也可以幫助消化,解毒消热,降血脂的作用。

材料:
白蘿蔔    -    2條
蜜棗        -    1粒
紅棗        -    8-10粒 (我喜歡切片)
乾魷魚    -    1片
蚝豉        -    7-10個
乾貝        -    7-10個
湯骨        -    200g to 300g

做法:
1. 首先用玉蜀粉清洗湯骨,然後加入清水,葱,姜,料酒和湯骨一起煮至沸騰。之後再煮5分鐘左右,撈起湯骨用清水清洗表面血沫。
2. 把全部材料放入氣壓鍋,加入2公升多的清水一起煮25分鐘。
3. 按压气阀后,排完氣打開鍋加入適量鹽調味。然後蓋上鍋蓋再煮25分鐘。
4. 25分鐘后,我會把整鍋湯再用煤氣煮至少25分鐘,之後就可以享用了。

平時我們用煤氣煲湯需要至少2個小時,用氣壓鍋就可以減少的煲湯的時間。通常我會使用氣壓鍋煮50分鐘,然後再用煤氣煮25分鐘。 雖然有一點麻煩,但我覺得這樣好喝一點。假如不想麻煩,那就不要用煤氣再煮。

White radish soup is a well-known soup. I like to drink it and I also like to cook it for my family. White radish soup has a good cooling effect, and it can also help digestion, detoxify and reduce heat, and lower blood fat.

Ingredient:

Candied dates  - 1pcs
Red dates         - 8-10 pcs
Dried squid      - 1 pcs
Dried oysters    - 7-10 pcs
Dried scallops  - 7-10 pcs
Soup bone        - 200g to 300g

Instruction: 
1. First wash the soup bone with corn powder, then add water,onion, ginger, cooking wine and cook until boiled. Cook another 5min, then take out the soup bone and wash the blood foam.
2. Put all the ingredients into pressure cooker, add 2liters++ of water and cook 25min
3. After pressing the air valve, open the pot after exhausting the air , then add some salt to taste. Then cover and cook for another 25min.utes.
4. After 25 minutes, I trasnfer whole pot soup to gas stove and cook at least another 25min. Then can be served.

Usually we need at least 2 hours to cook soup with gas stove,but now we use the pressure cooker can reduce the cooking time. Normally I cook for 50 minutes by using the pressure cooker, then trasnfer it to the gas stove cook 25 minutes . Although it is a superfluous, but i think the taste will be more better.
