Pan Grilled Lemongrass Chicken Wing

Grilled Lemongrass Chicken Wing is a dish suitable for gathering potluck , it so simple and delicious.
Let's see what have to prepared. 

Ingredient Marinated :
- 800g Chicken Wing
- 4 stalk Lemongrass
- 2 tbs fish sauce
- 1 tbs soy sauce
- 1 tbs dark soy sauce
- 1 tbs sugar
- 1/2 tbs ShaoXing Wine

Ingredient Sauce :
- 2 tbs fish sauce
- 1 tbs soy sauce
- 1/2 tbs sugar
- 1 stalk lemongrass

Instruction :
- Clean and cut the chicken wing and drain the water
- Fine chop the lemongrass .( Only take the bottom white color area)
- After add into chicken wing and also add in all the marinated ingredient.
  (Marinated minimum 2 hr and above)
- Heat a pan with little bit oil , before add in the chicken wing , try to remove the lemongrass which 
  stick on the chicken wing. This to avoid the chicken wing easy to burnt.
- After grilled all the chicken wing, then make the sauce. Some people will use back the marinated 
  sauce , but i prefer not.
- Heat back the same pan, add in the sauce ingredient , then add in the Grilled chicken wing into pan
  and mix it will. Let all the chicken wing also applied the sauce
- Then can be served. 



Braised Pork Knuckle With Peanut

Last Sunday we have family gathering at my elder brother's house. So i prepare some dish bring to there shared together. Actually Braised Pork Knuckle With Peanut have many different recipe, some people also like to add in Fermented bean curd cook together.

Ingredient :
- 1 pork knuckle (1.5kg)
- 1 pcs Onion (Cut in slide)
- 1 pcs Ginger
- 6 glove garlic
- 3 small can peanut
- 3 pcs star Anise
- 1 pcs Cinnamon Stick
- 2 pcs Bay Leave
- 4 pcs dry chili
- 8 pcs peppercorns 
- 3 tbsp rock sugar
- 2 tbsp oyster sauce
- 1 tbsp dark soy sauce
- 6 tbsp soy sauce
- water enough cover the pork knuckle

Instruction :
- Cut the pork knuckle in Middle cube. Then boil the water and add in the pork knuckle and the
   ginger. Lightly blanch the pork for few minutes to remove any impurities .
- Drain the pork knuckle from the boil water then wash again with cold water.
- Take a pot and add in the star Anise, Bay Leave, Cinnamon stick and peppercorns , then stir fried
   without oil until the aroma come out.
- Add in some oil , then add in dry chili ,garlic , ginger and onion and stir fried a while
- Add in the pork knuckle and continues stir and follow by oyster sauce and dark soy sauce.
- Add the soy sauce from the edge of the pot and keep stir fried, then add in rock sugar and the water
   which enough cover the pork knuckle .
- Cover the liq and middle fire cook about 45 min.
- After 45min, taste it and add in the Can peanut and continues cook another 30 min.
- Then can be served.

Mutton Varuval

After try to cook Masala Pork Rib, i bought the lamb shoulder to cook Mutton Varuval. Compare this 2 dish, Varuval will be a bit dry. Let see what ingredient have to prepared. 

Ingredient :
- 700g lamb shoulder
- 2pcs Onion
- 10 Glove Garlic
- 1pcs Ginger
- 4pcs Dry Chili
- 2tsp Meat Curry Powder
- 1 1/2tsp Turmeric Powder
- 2 tsp Galam Masala
- 4pcs Star Anise
- 4pcs small Cinnamon stick
- 5pcs Clove
- 5pcs Cardamon
- 8pcs Peppercorns 
- 1/2tsp Salt
- 4 stalk curry leave 

Instruction :
- Fine Chop garlic, ginger and onion
- Boil the hot water and add in some fine chop garlic,ginger and onion, then add in the lamb shoulder
   and let it boil about 45 min to 60 min .
- Heat another wok with little bit oil, add in clove, cinnamon stick , cardamon, peppercorn and star 
  Anise, stir fried until aroma out. 
- Add in the balance fine chop ingredient ,curry leave and dry chili , then keep stir fried.
- After the mixture turning color, add in all the powder ingredient and keep stir fried well.
- Add in the cooked lamb shoulder into the mixture , add little bit water and keep stir fried. Then 
  cover by liq cook about 10 min or until the sauce slowly be dry. 
- Then can be served with rice or bread.

Masala Pork Rib

This evening bought the pork rib from the shop and plan to bake pork rib. But end up change to cook Masala Pork Rib. Let's see what ingredient have to prepare. 

Ingredient :
- 1 middle rack Pork Rib
- 1 tomato
- 2pcs onion
- 10 glove garlic
- 1pcs ginger
- 2pcs dry chili
- 1tsp Chili Powder
- 1tsp Turmeric 
- 1tsp Masala
- 2pcs Star Anise
- 2small Cinnamon stick 
- 3pcs Clove
- 3pcs Cardamon
- 5pcs Peppercorns 
- 1/2tsp salt

Instruction :
- Cut the pork rib and clean it . After put in the water cook about 30min to 45 min .
- Fine chop Garlic, Onion and Ginger.
- Add little bit Fine chop garlic,onion and ginger into boiling pork.
- Prepare another wok, add in little bit oil and follow by Clove,Cinnamon stick ,Cardamon and 
  Peppercorns and stir fried until aroma out.
- Then add in fine chop garlic,onion,dry chili and ginger and keep stir. 
- When the ingredient slowly turn color, add in Chili Powder,Turmeric and Masala , then keep stir.
- Add in the cooked pork rib and stir fried. Then cover the liq cook about 10 min.
- Open liq and stir well and taste it, then add in the salt and tomato cook another 10min. 
- Then can be served.

Chinese Yellow Wine Rice Prawn & Scallop Pot

Last weekend second brother bring back a bottle Chinese Yellow Wine Rice and prepared to cook a Hotpot for the prawn and scallop. Chinese Yellow Wine rice is a type of Chinese alcoholic beverage and it not less than 20 % alcohol. Most the Chinese women will have it during the confinement time.
Most the time they will cook together with the Village Chicken and Bentong Ginger.

This hotpot really simple and easy to prepare, just within 15mins the dish can be ready . 

Ingredient :
- 3pcs U3 Big Prawn 
- 5pcs Canada Scallop 
- 10glove Garlic
- 50g Ginger
- 2pcs Chili Padi
- 450ml Chinese Yellow Wine Rice Prawn

Instruction :
- Clean the prawn and Scallop and cut them in half. 
- Slice the garlic, cut the Chili Padi and cut the ginger in strips.
- Arrange the prawn, scallop, garlic, chili padi and ginger in the pot
- Pour the Chinese Yellow Wine Rice Prawn enough cover all the ingredient or if you like to have
  more soup, you can adjusted yourself. 
- Cover with liq and cook about 7 min, then can be served.
