After try to cook Masala Pork Rib, i bought the lamb shoulder to cook Mutton Varuval. Compare this 2 dish, Varuval will be a bit dry. Let see what ingredient have to prepared.
Ingredient :
- 700g lamb shoulder
- 2pcs Onion
- 10 Glove Garlic
- 1pcs Ginger
- 4pcs Dry Chili
- 2tsp Meat Curry Powder
- 1 1/2tsp Turmeric Powder
- 2 tsp Galam Masala
- 4pcs Star Anise
- 4pcs small Cinnamon stick
- 5pcs Clove
- 5pcs Cardamon
- 8pcs Peppercorns
- 1/2tsp Salt
- 4 stalk curry leave
Instruction :
- Fine Chop garlic, ginger and onion
- Boil the hot water and add in some fine chop garlic,ginger and onion, then add in the lamb shoulder
and let it boil about 45 min to 60 min .
- Heat another wok with little bit oil, add in clove, cinnamon stick , cardamon, peppercorn and star
Anise, stir fried until aroma out.
- Add in the balance fine chop ingredient ,curry leave and dry chili , then keep stir fried.
- After the mixture turning color, add in all the powder ingredient and keep stir fried well.
- Add in the cooked lamb shoulder into the mixture , add little bit water and keep stir fried. Then
cover by liq cook about 10 min or until the sauce slowly be dry.
- Then can be served with rice or bread.
