Chinese Braised Pork Belly (Hong Shao Nou红烧肉) is very famous dish in Asian country. You can order in many Chinese Restaurant and it also have many different recipe. I found this recipe in YouTube, Ingredient not much and the instruction not complicated.
Ingredient :
- 500g Pork Belly
- 150ml Rice wine
- 5 tbsp Soy Sauce
- 60g Rock Sugar
- 50g Spring Onion (Cut about 3 to 4 inch)
- 50g Ginger (Slice it )
- 1pcs Bay Leaf
Instruction :
- Clean the pork belly and cut in cube size about 1 inch or 1.5 inch
- Then boil the water and add in the pork belly,2 slice ginger and few spring onion. Lightly blanch the pork for 1 to 2 minutes to remove any impurities .
- Drain the pork belly from the boil water then wash again with cold water.
- Add little bit oil into pan and add in pork belly and fried all side turn little bit color then remove from pan.
- Take a Claypot put on small firer and add in all the spring onion and following by slice ginger then add arrange the pork belly
- Add in rice wine and cover lid and cook about 15min
- Use back the pan with the pork oil, add in rock sugar cook until melt then add in 50ml water.
- Add in the rock sugar water into claypot and cook about 50min. (Before you cover the lid, you can cut one foil just fit to the claypot , put on top of the meat then only cover with lid. )
- After 50 min, remove the foil add in the soy sauce and turn to middle fire cook until the reduction until the sauce in certain level.
- Add in some fine chop spring onion then can be served.
