This was my first time make the whole cake, start from the base until the topping.
Sponge Cake
Ingredient:
- 90g Cake Flour
- 38g Caster Sugar
- 38g Caster Sugar
- 45g Corn Oil
- 75g Water
- 3tsp Vanilla Essence
(**Above ingredient enough to make 2pcs 6 inch Cake and each 1.5inch height**)
Instruction :
- Put 3 egg yolk into mixing bowl, then add in 1 portion caster sugar and mix by using whisk until it turns light yellow colour.
- Slowly add in water and keep mixing,then add in corn oil and continues mixing.
- Add the sifted cake flour and mix well until mixture look smooth.
- Last add in vanilla essence and mix well , then put aside.
- Put the balance egg white into mixing bowl and beat with high speed 6 with 30 sec
- Add in caster sugar by 2 times and beat until stiff peak. ( 1/2 with 6speed with 30 sec / 1/2 with 6 speed with 1min / last speed with 4 speed with 30sec )(have to foamy like ice cream )
- Slowly add in egg white mixture into the flour mixture by 3 time. Mix gently with a spatula. ( Use J type turning bowl method to mix well )
- Pour the mixture into the 6inch mold .
- Place into lower middle level of preheated oven bake 18 to 20 min with 170.
- After done put aside and let it cool down.
By the time waiting bake the cake, i also prepared the butter cream for the decoration.
Buttercream Rose
Ingredient:
- 115g Butter
- 1pcs Egg white
- 15g sugar
- 30g sugar
- 15g water
Instruction :
- Add 30g sugar into water and use medium fire to boil
- Beat the Egg White with high speed until be white bubble
- Add 15g sugar into egg white mixture and continues until the egg white mixture be straight up.
- Quickly add in the boiled sugar water and beat about 10min.
- After put in fridge about 15min
- Take out and add in the butter, beat until smooth
** when the time add in butter and beat, you will see the egg white no more straight up and feeling like melt, don't worry about that, just keep use high speed beat until smooth.
- Put in the fridge ,them can start to make rose. ( you can refer to the Buttercream Flower )
Fresh Cream
Ingredient:
- 200g Vivo Topping Ace
Instruction :
- Pour the Topping into mixing bowl and beat it until foamy like ice cream then can ready for topping the cake
After 3 ingredient ready , then can combine the cake and topping.
Instruction :
- Place one layer of cake on the cake plate, spread the fresh cream on the cake.
- Add in the strawberry (cut dice) , add add again the fresh cream
- Place second layer of cake on top of it , then start apply fresh cream .
- After the fresh cream fully apply nicely then can start decorate the cake with fresh strawberry and the buttercream rose.
