Ayam Goreng Kunyit 姜黄炸鸡




Ingredient:
400g    -    Chicken cube
1pcs     -    Chili (Cut in round)
1pcs     -    Yellow Onion (Slice)
5pcs     -     Baby corn
3pcs     -     Long bean
1/2pcs  -     Carrot
2pcs     -     Garlic (Fine Chop)
1tsp      -     Turmeric Power
1/2tsp   -     Salt

Marinate Chicken
1tbsp    -    Turmeric Powder
1tbsp    -    Curry Chicken Powder
1tsp      -    Paper
1tsp      -    Salt
1tbsp    -    Corn Flour

Instuction:
1. Marinate the chicken and put aside.
2. Cut the long bean, baby corn and carrot in same length. After boil hot water and half cook them.
3. Heat the wok with oil and start fried the chicken.
4. Remote some oil from the wok and add in yellow onion,garlic and chili, then keep stir well.
5. Add in 1tsp tumeric powder and keep stir.
6. Add in the half cook vegetable and keep stir fried  and also add in 1/2 tsp salt to taste.
7. Cook untill all fully cook well then can be served.

材料:

1 颗 - 黄洋葱(切片)

1/2 颗 - 胡萝卜
2 颗 - 蒜(细碎)

腌鸡
1 汤匙 - 姜黄粉
1 汤匙 - 咖喱鸡粉
1 茶匙 - 纸
1 茶匙 - 盐
1 汤匙 - 玉米粉

操作说明:
1.将鸡肉腌制好备用。
2. 将长豆角、玉米须、胡萝卜切成同样的长度。 热水烧开后,将其煮至半熟。
3. 炒锅烧热,放入油,开始煎鸡肉。
4. 锅中倒掉一些油,加入黄洋葱、大蒜和辣椒,继续搅拌均匀。
5. 加入1茶匙姜黄粉,继续搅拌。
6. 加入半熟的蔬菜继续翻炒,加入1/2茶匙盐调味。
7.煮至全部熟透即可上桌。

Steamed Chicken with Cordyceps Flower 蟲草花蒸雞

Cordyceps flower is not a flower, it is a cultured fungus or mushrooms. It Chinese Name is 蟲草花, and it has some medicinal effects. 
Cordyceps flower have the following health benefits such as nourish lungs, reduce fatigue, enhance our immune system, improve sleep, tonify kidneys and liver, cough relief (it helps to moisten the throat) & rich in anti-aging properties. 

Ingredients:
1/2 pcs    -   Chicken 
20g         -   Cordyceps Flower
8pcs       -    Red dates
15pcs     -    Wolfberries

Marinate Chicken:
1/2tsp    -    Salt
a pinch     Sugar
2tbsp     -    Soy Sauce
1tbsp     -    Oyster Sauce
1/2tbsp  -    Corn Flour
5slice    -     Slice Ginger
1/2tbsp  -    Oil

Instuction: 
1. Marinate the chicken and put aside about 15min
2. Wash the cordyceps flower then add in the chicken . After add in the red dates and wolfberries, then mix well
3. Take a wok ad water, after water boil add in the chicken steam about 15min.

虫草花不是花,它是一种培养的真菌或蘑菇。 它有一定的药用功效。
虫草花具有润肺、消除疲劳、增强免疫系统、改善睡眠、补肾益肝、止咳(有助于润喉)和丰富的抗衰老特性等保健功效。

材料:
1/2 件 - 鸡肉
20g - 虫草花
8颗 - 红枣
15颗 - 枸杞

腌制鸡肉:
1/2 茶匙 - 盐
少许 - 糖
2 汤匙 - 酱油
1 汤匙 - 蚝油
1/2 汤匙 - 玉米粉
5片 - 姜片
1/2 汤匙 - 油

使用说明:
1.将鸡肉腌制15分钟左右
2. 将虫草花洗净,加入鸡肉。 加入红枣和枸杞后搅拌均匀
3. 锅中加水,水烧开后加入鸡肉蒸约15分钟。

Pork Stir Fry with onions and capsicum 洋葱燈籠椒炒肉片


Ingredients:
1pcs        -    Onion (cut in medium dice)
1/2pcs     -    Capsicum (cut in large dice)
1/2pcs     -    Carrot (slice)
300g       -    Pork Slice
2pcs        -    Chili Padi
2pcs        -    Spring onion (only white part and cut it)
3pcs        -    Garlic (chop)
1tsp         -    Chicken essence
a pinch    -    Sugar
1/2tbsp    -    Soy Sauce
1/2tbsp    -    Osyter Sauce

Marinate pork
1tsp        -    Salt
1/2tsp     -    Paper powder
1tsp        -    Cooking wine
1tsp        -    Soy sauce
1tsp        -    Dark Soy Sauce
1tsp        -    Corn flour
1tsp        -    Oil
1/2pcs    -    Egg white 

Instruction:
1. Wash the pork slice with water and let the blood smell out. Then squeeze out the water.
2. Start marinate the pork add in the salt, paper powder, cooking wine , soy sauce and dark soy sauce. After mix it well , then add in egg white mix well and add in the corn flour. Finally add in the oil mix well and put aside.
3. Heat the wok with oil, add in the pork slice and cook look tender and pour out and put aside
4. Heat again the wok, add in others ingredient and keep stir fried . After add in the pork slice keep stir fired until evenly.
5. Add in the chicken essence, sugar, soy sauce and osyter sauce stir fried until fragant,then can be served

材料:
1 颗         - 洋葱(切成中等大小的丁)
1/2 粒      - 辣椒(切成大丁)
1/2 颗      - 胡萝卜(切片)
300克      - 猪肉片
2 颗         - 指天椒
2 颗         - 葱(只取白色部分,切粒狀)
3颗          - 蒜(切粒狀)
1茶匙     - 鸡精
少许       - 糖
1/2 汤匙 - 酱油
1/2汤匙 - 蚝油

腌制猪肉
1 茶匙 - 盐
1/2茶匙 - 纸粉
1茶匙 - 料酒
1茶匙 - 酱油
1茶匙 - 黑酱油
1茶匙 - 玉米粉
1 茶匙 - 油
1/2 件 - 蛋清

操作说明:
1.猪肉片用水洗净,沥去血腥味。 然后将水挤出。
2.开始腌制猪肉,加入盐、纸粉、料酒、酱油和老抽。 搅拌均匀后,加入蛋清搅拌均匀,然后加入玉米粉。 最后加入油拌匀备用。
3.炒锅烧热,放入油,放入猪肉片,煮至嫩状后倒出备用
4. 再次加热锅,加入其他材料继续翻炒。 加入猪肉片后继续翻炒至均匀。
5.加入鸡精、糖、酱油、蚝油炒香即可.

Fried egg with Lady's Fingers (Okra)羊角豆炒蛋 /秋葵炒蛋

 


Lady's fingers is one of my favourite vegetable. It also called Okra. It is a quick and nutritios food. Let prepare the ingredient we need.

Ingredients :
15pcs    -    Lady's fingers (cut in some piece)
1pcs      -    Medium Size Onion (slice)
1pcs      -    Chili Padi (cut in round shape)
2pcs      -    Garlic (fine chop)
4pcs      -    Egg
2tbsp     -    Soy sauce

Instruction:
1. Beat the egg into bowl and add in a teaspoon of salt, mix well
2. Heat the wok with oil, then pour the egg mixture into it stir fried until slightly burnt and franrant out.
3. Take out the egg and put aside, left a bit oil at work, add in the slice onion and fine chop garlic and chili padi and stir well.
4. Add in the lady finger  and keep stir. After the lady's fingers turn cooked, add in the egg and keep stir.
5. Add the soy sauce from the wok edge then stir fried evenly then can be served. 

羊角豆是我最喜欢的蔬菜之一。 它也被称为秋葵。 是一种快速又营养的食品。 让我们准备好我们需要的材料。

材料:
15 颗   - 羊角豆(切成小片)
1 颗     - 中等小洋葱(切片)
1 条     - 指天椒(切圆粒狀)
2 颗     - 大蒜(切碎)
4颗      - 鸡蛋
2 汤匙 - 酱油

做法:
1.将鸡蛋打入碗中,加入一茶匙盐,搅拌均匀
2.炒锅烧热,倒入油,倒入鸡蛋液,炒至微焦,出香。
3.鸡蛋取出放在一边,留少许油,加入切片的洋葱、切碎的大蒜和指天椒炒匀。
4.加入羊角豆,继续翻炒。 羊角豆熟后,加入鸡蛋,继续翻炒。
5.锅边慢慢加入酱油翻炒均匀即可食用。

Lotus Peanuts Soup with Pork Ribs 莲藕花生排骨湯

莲藕湯我個人蠻喜歡的。有時候我會放粉葛或黑豆一起煲。這次我加入花生一同煲。這湯有補脾润肠丰肌、补中益气、润肺养胃、化痰解毒、通血脉之效 。

材料:
莲藕        -    半節
花生        -    適量
乾魷魚    -    2片(小片的)(也看個人喜歡加還是不加)
蜜棗        -    1粒
紅棗        -    8-10粒 (我喜歡切片)
排骨        -    300g
枸杞        -    適量

做法:
1. 首先用玉蜀粉清洗排骨,然後加入清水,葱,姜,料酒和湯骨一起煮至沸騰。之後再煮5分鐘左右,撈起湯骨用清水清洗表面血沫。
2. 把全部材料放入氣壓鍋,加入2公升多的清水一起煮25分鐘。
3. 按压气阀后,排完氣打開鍋加入適量鹽調味和枸杞。然後蓋上鍋蓋再煮25分鐘,之後可以享用了

Lotus root soup is one of my favor soup. Sometime i'll add in arrowroot powder or black beans cook together. This time i added peanut cook together. This soup has the effects of nourishing the spleen, moistening the intestines, enriching the muscles, nourishing the middle and replenishing qi, nourishing the lungs and stomach, reducing pglegm and detoxification and dredging the blood vessels.

Ingredient:
Lotus                 -    half part
Peanut                -    in moderation
Dried squid        - 2 pieces (small pieces) (depending on whether you like to add or not)
Candied dates    - 1 piece
Red dates           - 8-10 pcs (I like sliced)
Pork Ribs           - 300g
Goji berries        - in moderation

Instruction :
1. First wash the pork rib with corn powder, then add water,onion, ginger, cooking wine and cook until boiled. Cook another 5min, then take out the soup bone and wash the blood foam.
2. Put all the ingredients into pressure cooker, add 2liters++ of water and cook 25min
3. After pressing the air valve, open the pot after exhausting the air , then add some salt to taste and Goji berries. Then cover and cook for another 25minutes. After can be served.

Watercress Soup 西洋菜汤

西洋菜汤味甘微苦,性寒,清火,可以清燥润肺,多吃西洋菜,能够起到化痰止咳的作用 同時也利尿通便。也能够帮助人体提高免疫力,特别适宜儿童吃西洋菜,增强孩子的免疫力。我看了啊鴻老師分享也嘗試煲,果然是材料和煲法簡單,味道也不錯。

材料:
西洋菜    -    500g
湯骨        -    250g
红枣        -    7-8粒
枸杞        -    适量

做法:
1.首先清洗西洋菜,過後用鹽水浸泡15分鐘,然後濾水待用。這可以洗比較乾净。
2.用玉蜀粉清洗湯骨,然後加入清水,葱,姜,料酒和湯骨一起煮至沸騰。之後再煮5分鐘左右,撈起湯骨用清水清洗表面血沫。
3. 倒入2公升的清水在鍋和再加入湯骨和红枣一起煮之沸騰。
4. 拿一個濾網 放入一小撮的西洋菜,燙軟。把它剪短放入搅拌机,然後加入1/3杯水攪拌。
5. 把攪拌好的西洋菜汁倒入鍋内一起煮20分鐘。(這樣會更入味)
6. 加胡椒粉和鹽調味,然後把其餘的西洋菜放入鍋中和枸杞和泡枸杞水一起倒入,煮10分鐘。

Watercress soup is sweet and slightly bitter, cold in nature, clears fire, can clear dryness and moisten lungs, eat more watercress, it can reduce phlegm and relieve cough, and at the same time diuretic and laxative. It can also help the body improve immunity, especially suitable for children to eat watercress to enhance their immunity. I watched Mr. Ah Hong’s sharing and tried to cook it. The ingredients and cooking method are simple, and the taste is not bad.

Ingredient:
Watercress  - 500g
Soup bone  - 250g
Red dates    - 7-8 capsules
Goji berries - in moderation

Instrution :
1. Wash the watercress first, then soak in salt water about 15 minutes, then drain and put aside.
2. Wash the soup bone with corn powder, then add water,onion, ginger, cooking wine and cook until boiled. Cook another 5min, then take out the soup bone and wash the blood foam.
3. Pour 2 liters of water into the pot, then add the Soup bone and red dates and bring to a boil.
4. Take a strainer and put a handful of watercress into it, blanching till soft. Cut it short and put it in a blender, then blend with 1/3 cup of water.
5. Pour the watercress juice into the pot and cook for 20 minutes. (this will be more tasty)
6. Add pepper and salt to taste, then put the rest of the watercress into the pot, pour in the goji berry and soaking goji berry water, cook for 10 minutes.




White Radish Soup 白萝卜湯

白蘿蔔湯是一道家喻戶曉的湯。我蠻喜歡喝同時也會喜歡煮給家人喝。白蘿蔔湯有很好的消暑作用,同時也可以幫助消化,解毒消热,降血脂的作用。

材料:
白蘿蔔    -    2條
蜜棗        -    1粒
紅棗        -    8-10粒 (我喜歡切片)
乾魷魚    -    1片
蚝豉        -    7-10個
乾貝        -    7-10個
湯骨        -    200g to 300g

做法:
1. 首先用玉蜀粉清洗湯骨,然後加入清水,葱,姜,料酒和湯骨一起煮至沸騰。之後再煮5分鐘左右,撈起湯骨用清水清洗表面血沫。
2. 把全部材料放入氣壓鍋,加入2公升多的清水一起煮25分鐘。
3. 按压气阀后,排完氣打開鍋加入適量鹽調味。然後蓋上鍋蓋再煮25分鐘。
4. 25分鐘后,我會把整鍋湯再用煤氣煮至少25分鐘,之後就可以享用了。

平時我們用煤氣煲湯需要至少2個小時,用氣壓鍋就可以減少的煲湯的時間。通常我會使用氣壓鍋煮50分鐘,然後再用煤氣煮25分鐘。 雖然有一點麻煩,但我覺得這樣好喝一點。假如不想麻煩,那就不要用煤氣再煮。

White radish soup is a well-known soup. I like to drink it and I also like to cook it for my family. White radish soup has a good cooling effect, and it can also help digestion, detoxify and reduce heat, and lower blood fat.

Ingredient:
White Radish   - 2pcs
Candied dates  - 1pcs
Red dates         - 8-10 pcs
Dried squid      - 1 pcs
Dried oysters    - 7-10 pcs
Dried scallops  - 7-10 pcs
Soup bone        - 200g to 300g

Instruction: 
1. First wash the soup bone with corn powder, then add water,onion, ginger, cooking wine and cook until boiled. Cook another 5min, then take out the soup bone and wash the blood foam.
2. Put all the ingredients into pressure cooker, add 2liters++ of water and cook 25min
3. After pressing the air valve, open the pot after exhausting the air , then add some salt to taste. Then cover and cook for another 25min.utes.
4. After 25 minutes, I trasnfer whole pot soup to gas stove and cook at least another 25min. Then can be served.

Usually we need at least 2 hours to cook soup with gas stove,but now we use the pressure cooker can reduce the cooking time. Normally I cook for 50 minutes by using the pressure cooker, then trasnfer it to the gas stove cook 25 minutes . Although it is a superfluous, but i think the taste will be more better.

Minced Pork Japanese Tofu

Ingredients:
3tube          Japanese Tofu (Cut 6pcs/tube)
1cup           Corn Flour
3glove        Garlic (Fine Chop)
1pcs            Shallot (Finie Chop)

Marinate Mince Pork:
150g           Mince Pork
1tsp            Soy Sauce
1tsp            Corn Flour
1tsp            Sesame Oil

Sauce:
1 1/2tbsp    Soy Sauce
1tbsp          Oster Sauce
1tbsp          Beancurd
1/2tbsp       Corn Flour
1/2cup        Water

Thickness 
1tbsp          Corn Flour
2tbsp          Water

Instruction:
1. Put 1 cup corn flour into plate and add in japanese tofu and let it cover by corn flour
2. Heat a pant with oil and deep fried the tofu, then put a side.
3. Heat another pant with oil, add in Shallot & Garlic stir fried
4. Add in the marinate mince pork and stir fried 2 min.
5. Then add in the sauce and keep stir fried. 
6. Add in cornstarch mixture and keep stir.
7. Add in the fried tofu and mix well then can be served with garnish. 



 

Sambal Telur Pecah

Ingredients:
2glove     Garlic (Fine Chop)
1/2pcs     Onion (Fine Chop)
3tbsp       Chili Boh
3pcs        Egg
1tsp         Salt
1tsp         Sugar
1tbsp       Tamarind Water
1pcs        Tomato 
2tbsp       Anchovies (optional)

Instruction
1. Heat a pan with oil and add in anchovies stir fried then add onion & garlic stir fried
2. Add in chili boh and keep stir fried.
3. Add in tomato and little bit water let it cook.
4. Add in salt, sugar and tamarind water keep stir and cover the lip
5. Cook until chili oil come out then slowly make some space to crack the egg in side.
6. Wait the egg 70% cook, then shovel a bit chili cover the egg and let it cook
7. After a while can be served.

 

Coktial Agar-Agar (Mix Fruits)

Ingredians:
20g         Agar Agar Bertali (Brand Burung Layang-Layang)
1can       Mix Fruits
1can       Evaporated milk
150g       Sugar
900ml     Water

Instruction:
1. Wash the agar agar bertali , can cut in half
2. Add water in pot and together with agar agar and let it boil until the agar agar melt
3. Add in whole can fruits including the fruits juice and sugar and mix it
4. Add in the evaporated milk and let it boil 2 to 3 min. (In between have to stir)
5. Pour the agar agar mixture into the mould and let it cold
6. After cold then put into fridge chill about 4 hour.

 

Indian Style Fish Curry

Ingredients:
5fillet    Fish (ikan tenggiri) (Marinate with salt)
1pcs      Onion (Slice/Dice)
4glove  Garlic (Minced)
1pcs      Green Chili (Slice)
1stalk    Curry leaf
2pcs       Tomato (Blend)
2tbsp      Fish Curry Powder
3tbsp      Chili Powder
1/2tsp     Tumeric Powder
1/2tsp     Halba
4tbsp      Asam Water
1tsp        Salt

Instruction:
1. Add oil and stir fried the onion, garlic, green chili and curry leaf
2. Add in blend tomato and let it boil
3. Take a bowl and add in all the powder type then mix well with water
4. Add in Mixture powder and add in 2cup water let it boil
5. Add in Halba and mix well
6. Add in fish fillet and cook around 10min.
7. Add in salt and the asam water then continues cook anotehr 10min or cook until the top 
    level appear oil
8. Add coriander then can be served
