Dolma is a family of stuffed vegetable dishes common in
Mediterranean cuisine and surrounding regions.It also include Central Asia, Eastern Europe, Middle East
& Western Asia, they also like to make this dishes to serve the family and
guests.
The vegetable to be use normally are tomato, pepper,
onion, eggplant & zucchini.There have 2 ways to serving the dolma.
Meat Dolma are generally served warm and with tahini or
egg lemon sauce.
Dolma prepare with olive oil and stuffed with rice are
generally served cold with garlic yogurt sauce.
The filling generally consists of rice, minced meat or
grain. It also can add in onion, herbs like dill, mint or parsley and spices.
Let prepare Dolma ingredient :
- 1 jar of Grape Leaf
- 1 pcs Red Onion can chop
diced
- 1 cup Basmati Rice
- 1 can Tomato Sauce
- 1 can Tomato Paste
- 1 tbsp Pepper
- 1 tbsp Garlic powder
- 500 g Ground meat ( can
use beef, chicken or lamb)
- 1 tsp salt
- 1 bunches fresh parsley and chop mined.
Instruction :
- Remove the grape leaf form the jar and rinse very well under cold water. Bring a pot of water to a
boil and blanch the leaf in batches for 4 to 5 min.
- Add the salt into the
tomato sauce
- Take a big bowl put in the
ground meat, onion, parsley and rice.
- Add in tomato sauce
and mixing those ingratiate by the hand until mix well.
- Prepare another big pot
and put some olive oil on the bottom.
- Start to roll the Dolma. (Can
refer the below picture how to roll the dolma)
- Put the Dolma in the pot
and arrange it nicely.Add in the tomato paste on
top and put enough water
to cover until the sauce line.
- Put on medium fire cook it
until boil. After the Dolma boiled and half cover it with the lid again
and cook around 15 min.The last cover up and cook
another 10 min.
