Mandi is a traditional dish from Yemen of meat,
rice & spices.It is also eaten in some gulf Nations. It is
now very popular in others areas of Arabian Peninsula, Egypt, Levant &
Turkey.
Mandi is usually made from rice, meat (Lamb or
Chicken ) & some spices. The way to cook this dished normally they will cook
outside of the house, make a hole and put charcoal, put the pot on that
and cover it.

Even we don’t have the underground oven;
we also can cook the Mandi at home .
The way she teach is so clear and nice.
The Ingredient has to prepare:
1 kg Chicken
1 tsp Colored Zahfaran
1 tsp turmeric powder
2 tbsp salt
1 tsp Saudi spices
1 tsp salt
2 cup basmati rice
1 tbsp olive oil
2 pcs cinnamon sticks
5 pcs cardamom pods
6 pcs cloves
4 pcs chopped onion
½ cup raisins roasted
½ cup pine nuts roasted
½ cup shredded almonds
Chopped coriander
Barbeque Charcoal
Instruction :
- Mix spices 1 tsp zahfaran,
turmenric, salt, and Saudi spices together and rub with on the chicken on
both sides with gloves
- On medium high heat add
5 tbsp oil and 4 chopped onions in a pan, and cook till golden brown.
- Add golden onions in a
metal pot, 2 cinnamon sticks, 5 pcs cardamom pods, 6 pcs cloves, 1½ tbsp salt,
½ cup yellow raisins, 3 cups washed & drained basmati rice, and warm water.
- Stick your finger in the
pot to make sure the water covers your index finger and mix it well.
- Add metal rack on top of
the rice, and add the chicken.
- Let it cook on preheated
oven at 185 degrees Celsius for 1 hour to 1 hour & 20 min.
- Remove from the oven, add
the chicken inside the rice pot.

- Cover it quickly, and add
clothe on top to seal the smoke for 10 to 15 minutes.
- Remove the charcoal, and
serve rice and chicken.
- Sprinkle with roasted pine nuts, shredded almonds, and chopped coriander.
