After visit few Arabian
Restaurants, I fall in love with the Arabian dish. In their menu have a dish
called KABSA.
Kabsa is the national dish
of Saudi Arabia. It is a dish made of rice and meat, cooked either separately
or together. It can be made with spices and lamb, chicken or fish. It is
usually eaten for lunch and sometimes for dinner.
This is the first time I’m cooking Kabsa and I choose to use lamb meat.
The following is the ingredient have to prepare:
Main ingredients:
- 750g Lamb meat - 3pcs Tomato & chop slice
- 2 pcs Onion & chop slice - 1/2 cup raisin & Almond Flake
- 2 cup of Basmati rice
Spices Ingredients:
- 3 to 5 pcs Bay Leave
- 3 to 5 pcs Cinnamon Stick (small)
- 1 pcs Dried Lemon
- 1 tbsp Peppercorns , Cloves , Green Cardomon
- 1 1/2 tbsp Fine grate Garlic & Ginger
- 1 1/2 tbsp Fennel Seed , Turmeric Powder , Coriander Powder , Cumin Powder ,Salt
Instruction :
- Add in enough of oil to fries the lamb meat
- After add in the cloves, salt, cinnamon stick,dry lemon, bay leave, green cardamon, peppercorn,
turmeric powder & fennel seed , stir it well & cover it and cook 8 min.
- Open cover and stir it well and add in cumin powder, coriander powder, ginger, garlic & onion.
Stir well then cover it and cook 4 min.
- Open cover and stir well then add in tomato and keep stir. After cover it and cook 4 min.
- Open cover and stir well then add in cold water cover the lamb meat, cover it and
cook 30 min to 40 min.
- Take out the lamb meat and put a side.
- Add in the rice & stir well , then cook 10 min to 15 min .
- In the same time use the olive oil Fried heat the lamb meat.
- Use back the same oil fried raisin & almond flake.
After the rice cook well , can be served as below.
