Curry Puffs is one of the famous snacks in Malaysia. You
can found it in road side food stall or in the pastry house also. Curry puffs
are the deep fried crescent shaped pastries and it filled with spicy, sweet and
savory potato filling. It can be vegetarian food or meat food as well. A lot of
people will add in the meat or egg together to make taste nicer and full.
In the market you can see there have two type of pastry.
One is original and another is spiral. Most the people will like to eat spiral type,
because is crispier.
Let’s see how to make the Spiral Curry Puffs ( Malay:
Karipap Pusing Chinese: 螺旋咖喱角)
Ingredients
Water Dough:
- 400g Flour
- 1 cup Water
- ½ tsp salt
- 1 tbsp Margarine
Oil Dough
- 200g Flour
- 150g Butter
Filling:
- 300g Chicken Breast Meat (Cut in small cube)
- 2 pcs medium size potatoes
- 1 pcs Onion (Chop dice)
- 3 tbsp Meat Curry Power
- 2 glove of garlic
- ½ cup water
- Salt
Instruction:
- Peel and cut the potatoes into small cubes. Then steam it
until soft.
- Cut the chicken breast meat in small cube, dice the onion
and minced the garlic.
- Heat the pan with some oil start fry the garlic and onion
until soft, then add in the chicken.
- Add in the curry powder and fry until fragrant and
slowly add in the water and potatoes as well.
- Seasoning with salt and continues cook until thick.
- Set aside to cool while you make the pastry for the curry puffs.
Then can start to make the pastry.
- We have to separately knead
the two dough, which water dough and oil dough. After knead until smooth cover
it with tea towel and rest for 10 to 15 mins.
- Press the water dough then wrap oil dough inside of water dough.
- Then flatter with rolling pin and roll rectangular shape.
- After roll up from one end to the other like a Swiss roll.
- Turn the rolled dough upright. Flatten out the dough again into a long rectangular shape.
- Roll up like a Swiss roll again. Repeat for the rest of the combined dough.
- Cut the dough into 1cm thick pastry. The circles can be clearly seen on each piece of the cut dough.
- Using a rolling pin, press it flat and shape into a round shape with circles.
- Put 1 tablespoon of curry meat filling in the center of the flattened.
- Fold and shape into a half-moon and pinch the edges together to seal in the filling.
- Pleat up the edges neatly and decoratively.
-Repeat the same for the rest of the cut rolled dough and we're done making the curry puffs.
Then prepare to deep fry the curry puffs.
